Easy Breakfast Sandwiches
Breads:
- English muffins
- “Everything” bagels
- Croissants
- Regular sliced bread
Meats:
- Eggs
- Sausage patties (tip: cook ahead of time and freeze in food storage bags)
- Heat-n-eat bacon
- Sliced Canadian bacon
- Sliced ham or turkey lunch meat
Cheeses:
- Sliced American
- Cheddar
- Gouda
- Swiss
- Pepper Jack
- Provolone
Other fillings:
- Tomato
- Avocado
- Roasted red peppers or sliced fresh bell peppers
- Thinly sliced cucumbers
- Sliced portabella mushrooms
- Alfalfa sprouts
- Spinach
Sauces and spreads:
- Cranberry chutney
- Dijon or honey mustard
- Chipotle mayonnaise

One thing I love about this recipe is that you can throw down a hot breakfast in the time it takes to fry an egg. And with a variety of sandwich fillings, everyone in the family can go from “picky” to “pleased” just as quickly.
- Heat a lightly-oiled skillet over medium-high heat and crack an egg into it, if using. Prepare the way you like it – fried or scrambled.
- While the egg does its thing, prep the bread. Split it apart if needed, and toast. Add any spreads you plan to use and top with a slice (or two!) of cheese. Set aside.
- Heat up the meat of your choice in the microwave – usually 20-30 seconds tops. Add this to the cheese-topped bread.
- Add any other fillings at this time.
- When the egg is finished, add it to the sandwich and close it all up. If you need to get everything to a shared temperature, heat it in the microwave for about 15 seconds.
