Christmas Recipe For Gingerbread Cookies

One of my family’s favorite holiday traditions is making Christmas cookies – and here’s a fantastic Christmas recipe for gingerbread cookies that the whole family will love! These cookies are delicious and the best part is that you can make, bake, and store them well in advance. Then, after traveling in your new or used RV to the grandkids, you can bring them in and let them help decorate the gingerbread cookies. What kid doesn’t like decorating cookies?! Here’s the recipe for delicious cookies – and wonderful memories!

GINGERBREAD COOKIES

Ingredients:

  • 3 cups flour
  • 2 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ¾ cup butter, softened to room temperature
  • ¾ cup firmly packed brown sugar
  • ½ cup molasses
  • 1 egg
  • 1 tsp vanilla
  • Gingerbread cookie icing (recipe below)

Directions:

  • In a medium size bowl, mix all dry ingredients together. Whisk lightly to thoroughly combine, and set aside.
  • In another mixing bowl, combine butter and brown sugar with electric mixer. Beat until light and fluffy, then add molasses, egg, and vanilla. Mix well.
  • Gradually beat in flour mixture until thoroughly combined. Chill dough in fridge for at least 4 hours.
  • When you’re ready to bake the cookies, preheat oven to 350 degrees. Roll dough out on a lightly floured surface to about ¼-inch thickness. Use cookie cutters to cut the shapes you want and place at least 1 inch apart on ungreased cookie sheets.
  • Bake 8-10 minutes. Once cooled, you can stack and store cookies in an airtight container for 3-5 days or in the freezer for 3-4 weeks.
  • Decorate with cookie icing and enjoy!

GINGERBREAD COOKIE ICING

Ingredients:

  • 1 cup powdered sugar
  • ¼ cup milk
  • Food coloring, if desired

Directions:

  • Place the powdered sugar in a bowl. You can sift it first to make sure there are no lumps. Stir in milk a tablespoon at a time to make a smooth icing that’s not too runny. Add milk or powdered sugar as needed to adjust the consistency.
  • If you like, divide the icing into separate containers and add drops of food coloring, sparingly, to color it as desired.
  • Place icing into icing decorating bags, snip the tips, and get to decorating! If you don’t have icing bags, you can also place the icing in small food storage bags and they’ll work just as well.
